I recently made it down to Knowlton's Laguna Vista Ranch for an Axis hunt last weekend and what a thrill. I didn't get an axis (crafty little creatures) but took a fallow instead. 250lbs on the hoof.
I highly recommend this place. Absolutely incredible accommodations and the food...wow! We had bacon wrapped lechwe that was out of this world. I'll be back down there this October for Dove, and next spring for an Axis!
