Would this mean my original email from them stating up to six weeks is now reset to eight more weeks? I sure hope not.

Sorry, probably. Their original six wk time frame was once everything was received and now possibly more like "We're so hammered with applications and people are now starting to take summer vaction time w/their families ...... Either way it is now happening, use this time to train and prepare, then enjoy!
I went ahead and called. The gentleman was very polite and explained that I had been approved and should receive it within 14 days. :woohoo

Nice. Congratulations !!

Or should I just keep the address the same as is since I'm not selling the current home?

Check their webpage, it can be done online. Pretty quick and painless actually. However, if during the changeover, you have to show to a LEO they may "sternly" tell you to 'get it corrected ASAP' even if you tell them you're working on it.
What do you mean by changeover? like if I changed address while the application is ongoing? I assume that shouldn't be a problem now since I already got approved and my address won't change for another 5 months?[/quote]

I mean, 5 months down the road or whenever you move, IF you do a change of address as you should then there will be a timeframe where your address on your licenses will not match your physical address where you are now residing. That is the 'changeover' to which I was refering. Sorry about that, I knew what I meant  .
