It looks like the Texas Legislature is taking the possibility of an Article V Convention very seriously.
HJR 39 / SJR 2 Call for an Article V Convention to propose amendments to the constitution to impose fiscal restraints on the federal government, to limit the power and jurisdiction of the federal government, and to limit the terms of office of federal officials and members of Congress.
Additionally, HB506 / SB21 (Lieutenant Governor high priority bill) outline the qualifications, duties, and limitations of Texas delegates to a convention called under Article V of the United States Constitution.
This could get interesting...

You might not like the results of an article V convention. The tide can turn the other way too. You are not guaranteed that every proposed amendment would be to your liking. Be careful of what you wish for.
How about we just make the government live to the existing constitution?
Even with a convention, and if proposed amendments are confirmed by the states, the only way to enforce the constitution is the same way we have already. Think about it.

Since any amendment must be ratified by 3/4 of the states, it seems to me that this risk is minor, but maybe I'm missing something. This is the bigger issue for me. I think of the 10th amendment as an example of one that is completely ignored. It seems like we need an amendment that compels us to abide by the constitution!
