Jalapeno Stuffed Chicken (recipe)

Jalapeno Stuffed Chicken (recipe)

I was going to at least take a picture to go with the recipe, but it looked too good and I just ate it instead. :oops:

Ingredients:

4 chicken breasts (thick is good for stuffing)
8 slices bacon
4 tablespoons cream cheese
1/2 cup shredded cheese
4 diced jalapenos (more if they aren't very big peppers)
chili powder
kosher salt
black pepper
brown sugar

Preheat oven to 375.

Mix the diced jalapenos (seeded and scraped if you're a wimp, just diced if you're not), shredded cheese, and softened cream cheese.
Cut a pouch into the side of each breast and fill with cheese/jalapeno mix.
Mix salt, chili powder and pepper and sprinkle onto both sides of the chicken.
Wrap chicken with bacon (2 slices per breast) and pin the pouch closed with toothpicks. Sprinkle with brown sugar, and throw it in the oven.

Cook for 30 min and enjoy. :drool: :drool: :drool:

Sounds delish... I like spicy foods so I may try this for lunch tomorrow.

Of course, I am going to mess with your recipe. :mrgreen:

Before cooking, I will marinade the chicken overnight in a mixture of walnut oil and mayonnaise.

This adds some fat and keeps the chicken breasts moist.

Interesting. I'll have to try that next time...probably with just my piece though. The wife isn't a huge fan of mayo.

I made this last night and it was awesome! Thanks for posting. My wife just wanted a bite cause she said she wasn't hungry. She ended up eating a whole one herself. :smilelol5: :thumbs2:

All in all....very good. Next time, thinner chicken breasts...

I served them over pan fried hash browns.

I used hickory smoked Gouda cheese rather than the cream cheese and grilled them. They were perfect!

We make a very similar dish. We use Joy Peppers, a bread-n-butter jalapenos along with some of the jar's juice. Joy Peppers are made in Austin. We get them online.

I'm going to have to try the smoked gouda-- yummmmmy.

Fixed this last night for dinner... Simply outstanding
Only change to the posted recipe was to use 3 Jalapenos and 2 Serranos , in place of the 4 Jalapenos.

The package of chicken breasts I had on hand were mutants ... IOW LARGE darn breasts... took a few extra minutes of cooking to get the internal temp up to 160, but that was planned for.

Great recipe, simple, fast, and delicious..
