In this case maybe better training is needed? Could of used the famous "tazer" or just pepper sprayed him. This officer wasn't trained well enough IMO?

Agreed, he could have easily shot her. Interestingly, initially he used his left hand as a "leveraging arm" which is common in knife attacks.

The article said the bad guy was taken to the hospital with non-life threatening injuries. I counted around 16 shots fired. Maybe those deputies need some range time too. I have never been shot at up close and personal like that so I might just mess myself and spray bullets in all directions.

That's my most common gripe with LEOs and deadly weapons. They need to train A LOT to be able to put all shots on target. Not just "empty all mags" and hope they hit the target once.
All those news stories "15 deputies opened fire at the suspect who was struck twice in the shoulder" become scary once you start asking where the other 50 rounds went.
And before I get slammed with "being a LEO is a stressful job", y'all should know that there are good training methods to induce stress and get the adrenaline pumping while utilizing firearms and moving/life-like targets. Shooting static paper won't do that. We trust these people with our lives. IMHO, we should hold them to a higher (training) standard.
