My version of Power Protein Omelet:

1) A small chopped onion
2) 1 clove of garlic minced.
3) 2 small orange sweet pepper
4) 1/2 small tomato
5) 2 Large eggs
6) 2 Eggs' White
7) 1 small sausage chopped
8) 6-10 pitted green olive
9) a handful of crushed sweet roasted peanuts.

A) Season with salt and pepper and some spices of your choice.
B) spray some canola oil on frying pan.

Drop 1) to 4) and 7) on high heat, stir and flip well until the tomato water evaporates.
Drop 5) and 6) and get it to mid done on medium heat.
Sprinkle 8) and 9) on top,

and

Looks more like a frittata than an omelet.

Looks mighty tasty too.

I loves me some eggs. The only way to start a day is a breakfast with eggs.

Can you differentiate 5 and 6 a bit more please? Are those supposed to be egg whites?

Me too. I pray all goes well with you.

On another note, my wife saw this and wants to make it. We follow a high protein, low Glycemic Index carb diet. Looks good.

The good news for me, is that my ESRD is not 100% of kidney failure. The only failure I have is Creatinine clearance, other functions are just working fine. Thanks to all Mighty, the Lord and Creator of the world, God (Allah in Arabic).
