Over the last several years, there have been several robberies of Waffle House restaurants in Houston. I think that part of it is the locations tend to be near freeways so a quick get away is possible. Also it could be the they are open 24 hours so they can be robbed when most people are in bed asleep.

In Texas an assault using only the hands can be considered deadly force.

You don't need any weapon displayed at all to justify deadly force when someone is committing a robbery.

Robbery is one of the six crimes ("aggravated kidnapping, murder, sexual assault, aggravated sexual assault, robbery, or aggravated robbery") where deadly force is both justified and presumed reasonable (PC §9.31(a)(1)(C) and PC §9.32(b)(1)(C)).
