So, I moved from an apartment into a house (yay low interest rates), updated my DL online, sent in my renewal a couple days after I moved. Now its 30+ days since my move date.
Am I legal to carry? Or do I get to wait?

In my opinion you're OK. I am not a lawyer, of course, so don't sue me if something happens.
The law requires you to notify DPS of an address change within 30 days, which you did. The law does not set a time limit for DPS to process the change, and it does not create an offense for having a CHL with the old address.
If a cop is going to give you a hard time about having different addresses on your driver license and CHL, he is going to get you one way or another anyway.
Oh, and congratulations on the house.
